Michel Chapoutier set his sights on Australia, where he set up several projects all over the country. With the help of Ron and Elva Laughton (Jasper Hill), he takes care of vines situated to the north of Melbourne in Heathcote, on a very rare Cambrian terroir. In partnership with his American importer, he set up a joint-venture in the Australian Pyrenees, “Terlato & Chapoutier”: the domain in question.
The grapes are fully destemmed. The vatting period lasts from 4 to 6 weeks. The extraction is ensured by some gentle pumping over and a long maceration period. The wine is raised for 18 months in French barrels. A simply brilliant interpretation of Shiraz from Michel Chapoutier. The nose is spicy with aromas of cocoa and violet. The palate is fresh and balanced, with rich, crunchy tannins.
