Information
Domaine des Varoilles is a historical testimony in itself. Documents are found there that are among the oldest in Burgundy, because some climats were planted there before the 12th century. Domaine des Varoilles has 10 hectares of vineyards spread over climats such as La Romanée and Clos de Vougeot. The viticulture is sustainable there, and the annual replacement of the dead stock makes it possible to preserve the high age of the vines (sixty years old for the Romanée). Their roots descend 5 to 6 metres deep, thus enriching the trace elements of the soil. The yield is limited to 35 hl / ha, and the élevage of the wines lasts 12 to 24 months, in oak barrels which are partially renewed every year. The wines produced are delicate and reveal their full potential after 3 to 10 years.
Gevrey-Chambertin Clos du Meix des Ouches is produced from a parcel of one hectare, grown as a monopole wine; it is barrel-aged for approximately 15 months (20 % of the barrels are new). This wine has an extremely elegant nose and is very well rounded on the palate because of its supple tannins and the beautiful freshness of its aromas. It can be drunk from an early age onwards.
