Having learned her craft with Olivier Leflaive in 2003 in Puligny–Montrachet and then Julien Zernott, a regionally recognised figure from the Domaine du Pas de l'Escalette, Géraldine Laval set up her base on the Terrasses du Larzac in 2009, grouping together several hevtares of Grenache.
She carefully maintains her six-hectare vineyard without chemical treatments, intending to obtain organic certification. The same is true in the cellars, where she conducts vinification with as little intervention as possible. In her vineyards, she grows Grenache as well as a real range of other grape varieties: Terret, Syrah, Grenache Noir, Roussanne, Terret-Bourret, Grenache Gris and Chenin Blanc.
Her hard work results in highly refined wines which reflect their terroir, consisting of Languedoc grape varieties and limestone-clay soils.
Géraldine Laval has blended Terret Bourret (an indigenous grape variety) with Roussanne. Both are cultivated without chemical inputs, and are pressed directly in a pneumatic press. The wine is matured in demi-muid barrels for one year. The wine, produced in exclusively small quantities, is a great showcase for this regional grape: it reveals its minerality and polished texture with admirable precision. A great Languedoc wine for drinking with dishes such as fish.
