In creating the domain in 1988, Jean Thévenet named it after his ancestor, Emilian Gillet. This property spans 10 hectares of respectfully farmed vines on limestone soils. The typicity of the terroir is thus conserved, producing fresh, mineral wines rich in notes of white flowers.
This wine comes from Domaine Bonfran, the creation of Jean Thévenat, and Gautier Thévenet now tends it with his same respect for nature. This wine is produced with almost no intervention, from organic viticulture. Particularly expressive on the nose (notably citrus and white flowers), the mouth is rich and intense; the saline finish balances out this fleshy, crunchy wine. A Viré-Clessé which can easily cellar for 15 years and is best served alongside poultry or fish.
