In the heart of Chablis, Domaine Louis Michel and Fils is one of the oldest domaines of the appellation. And, most importantly, one of the most consistent. In the family since 1850, it now has some 25 hectares of vines planted on hillsides. The key to its success is the abolition of barrel élevage. As a result, the domaine produces clear, clean, precise non-wooded wines. At the head of the domaine, Guillaume is convinced that the sustainable cultivation of his vines favours the expression of this exceptional terroir. As for his wines, he handle them as little as possible during the vinification and the élevage. This respect for the product and this long-term work are rewarded by obtaining wines to age for ten to twenty years.
"Butteaux Vieilles Vignes" is produced from vines planted in 1964 on a plot located at the top of the slope, with clay loam soils on the surface and a limestone sub-soil. The wine's nose is characterised by acacia flower and licorice notes. On the palate, iodised hints precede a rich, slightly candied finish (peach, stewed apple, etc.).
