Domaine Les Pallières extends over 25 hectares in the foothills of the Dentelles de Montmirail. The vineyard was planted by the Hilarion Roux family and bought by two brothers, Brunier and Kermit Lynch, in 1998. The brothers built a new fermentation room to make single parcel cuvées. The wines reflect their clay, sand and limestone scree terroir and are of a very high quality; elegant and hearty with a very appealing freshness.
Les Terrasses du Diable is a parcel-based selection composed of 90% Grenache Noir complemented with equal proportions of Mourvèdre and Clairette. These vines were grown on very steep limestone scree terraces from the nearby Dentelles de Montmirail peaks. The grapes are harvested manually with a careful double sorting process in the vineyard. Fermentation is traditional, lasting between 25 and 30 days in thermoregulated concrete and wooden vats. The wine is matured for 22 months: the first 10 in vats, and the following 12 in wooden tuns. This Gigondas is seductive in a number of ways: its beautiful deep ruby colour, its clean, fresh nose, and its mineral mouth which, as it ages, gains in substance and roundness. It is a wine for keeping, best enjoyed with a stew, and should be opened one hour before drinking.
