Information
Château Gris has belonged to the Bichot family since 1978, a 19th century building in the middle of a 3.5 hectare clos. Bichot uses this monopole surrounded by a 1.2 km dry stone wall, where the vineyard is planted in terraces on the hill slope at an altitude of 280m. The land at the foot of the Château produces the red Nights-Saint-Georges Premier Cru Château Gris while those at altitude are planted with Chardonnay and produce the Nuits-Saint-Georges Les Terrasses en Blanc.
In spite of the terraced layout, the vines are planted at 10,000 stems per hectare to keep up competition between stock and achieve a better concentration of grapes. Yields, at around 25 to 35 hectolitres per hectare, are particularly low, in keeping with the majority of grand crus. The vines are tended manually and enriched with natural fertilisers produced from organic farming.
