Humility. A word that accurately sums up Guillaume Gilles, a rising star of the northern Rhône. This young winemaker made his debut amid some of the biggest names in the region such as Jean-Louis Chave and Robert Michel. He started his winemaking adventure in 2002 when he inherited half a hectare in Cornas from his grandfather. Truly passionate about his terroir, Guillaume's work both in the vineyard and the cave is a labour of love that produces wines with depth, power and finesse. Micro-parcel vinifications have become somewhat of a trademark of his and his Les Chaillots terroir is divided up into three separate vinifications: La Combe, Les Terrasses and Les Grands Murs. Sustainable agriculture, hand worked vines and tilled soil ensure high quality grapes. This is a domaine we urge you to discover but be warned that production is small.
Located on the upper part of Cornas, Les Chaillots is a complex terroir composed mainly of clay and limestone. Guillaume Gilles works his vines by hand, using sustainable cultivation methods. In the cellar, he employs micro-parcel vinification techniques. The grapes are vinified in whole bunches in concrete vats. They macerate for around three weeks, and undergo some punch-downs and pump-overs. The wine is then matured for 18 months in demi-muid casks. As you would expect from a wine of its reputation, this Cornas presents a beautiful purple colour with violet hues: this visual intensity immediately heralds the concentration of black berries. The nose reveals notes of stewed black berries and other, slightly wilder, notes of aromatic herbs and leather. The palate is extremely generous, and offers blackcurrant and blackberry flavours enhanced by touches of cocoa, mocha and menthol. The tannins mellow with time, making this a wine to cellar for about ten years.
