La Sobilane's glory days date back to its old vintages from the end of the Second World War. The estate is in Perpignan, and now belongs to Mauricette Daniel. Located at the heart of Roussillon, the domain produces excellent vins doux naturels, particularly in the Rivesaltes appellation.
The terroir of this Rivesaltes rests on clay-limestone soil with variations of brown and black shale. The vines flourish in this Mediterranean climate, in warm and dry summers as well as in gentle winters. Like all Rivesaltes, this benefits from aging called "oxidative" which involves letting the wine breathe for considerable time to modify the aromas. The fermentation is stopped artificially by adding neutral alcohol to the grape juice...so many of the sugars stop being transformed into alcohol, giving the wine its sweetness.
