In the heart of Provencal winemaking territory, 20 minutes east of Toulon, lies the Rimauresq vineyard which stretches over 50 hectares of the Maures Massif. Since 1988 the domaine has been owned by the Wemyss family, originally from Scotland. They have undertaken great works here over the years, modernising the winery but also restructuring the vineyard. Today Rimauresq is considered one of the most noteworthy vineyards in Provence. Their philosophy seeks to preserve the best of the fruit from the vines; soils are nurtured all year-round and grass is left to grow under all the vines. Vinification of the whites and rosés is all about preserving freshness; the fruit is harvested in the morning to capitalise on the impact of the cool night and then undergoes cold maceration in temperature-regulated stainless steel vats. Cold pressing separates free-run juice from the must and it then ferments at a low temperature. Whites and rosés mature on lees with regular stirring to ensure great aromatic intensity and good fat texture. As of 2020, it is certified organic and in 2023, its 2022 R rosé won a gold medal at Concours Général Agricole de Paris.
This is a blend of Syrah, Mourvèdre, Carignan and Cabernet-Sauvignon grapes from 30 year-old vines grown on the terroirs of Cuers and Pignans, whose soils feature red schist and red clay. The Cuvée Classique is a dense wine with a hint of spice and a bold tannic structure which develops and mellows over time. It therefore rewards drinking after a few years in the cellar, as an accompaniment to red meat.
