Francis Boulard and his daughter Delphine have belonged to a family of wine growers / winemakers for at least six generations. In the 1970s, the young Francis joined the company Boulard Frères and in 1975 vinification was soon entrusted to him. Maison Raymond Boulard & Fils was created in 1980. After their father died, Raymond Boulard's three children continued running the family domain together. Francis Boulard, while ensuring the vinification, is increasingly interested in grape cultivation. Eager to move towards as natural a culture as possible, he gives the field organic impetus that was reflected in the 2000s by making part of the vineyards organic. In 2009, Raymond Boulard's three children decided to pursue their career paths separately. The Raymond Boulard champagne house therefore no longer exists. Francis Boulard, his wife Jeanne and his daughter Delphine founded Champagne Francis Boulard & Fille. Together, they converted the domain to organic farming. Some of the vines are already certified but the whole domain is involved in this process. Since the outset, Francis Boulard has been trying to focus his production as far as possible on natural farming.
A magnificent champagne from one of the Montagne de Reims' finest grand crus, yet still affordable for such a wine. The average age of the vines (planted on clay-limestone soils) is 30 years. Vinification in small oak barrels and demi-muids. 30% of the blend is composed of old reserve wines. Alcoholic fermentation with native natural yeasts. Malolactic fermentation is conducted. Not fined. This champagne offers red fruit and citrus aromas; it is round, mineral and saline on the palate.
