This red Coteaux Bourguignons is from a parcel located on the plains below Volnay. That is where these roughly forty-year-old Pinot Noir vines grow on the limestone-clay soil. Grown with a few chemicals as possible, the grapes are harvested by hand, meticulously sorted on a table as they arrive at the cellar to preserve the perfectly ripe and healthy grapes. The grapes are then destemmed before being placed in open vats for natural yeasts to start the temperature-controlled fermentation. Racking is carried out twice a day to improve extraction, but no punching down occurs in order to preserve the fruit. After pressing, the wine is placed into oak barrels to mature for ten to twelve months. It is bottled after slight filtration, if necessary.
An excellent wine to be enjoyed at any time. This purple-coloured cuvée is completed by flavours of fruits and spices and the supple and juicy palate is perfectly balanced. Definitely a wine to be enjoyed while it’s still young.
