This wine has been created by blending Aligoté grapes from two plots. The first is planted with vines that are more than 70 years old and has been in the family for years. While the other contains the first vines, now about 30 years old, acquired by Vincent Bouzereau when he started to work at the estate in the 1990s. Both plots can be found in Meursault and as few chemicals as possible are used there. The hand-harvested grapes are sorted at the vine and pressed as soon as they arrive in the cellar. After being left to settle for 24 hours, the juice starts to ferment thanks to the natural yeasts present. The wine then matures for 10 to 12 months, with half of it going into oak barrels and the other half into stainless steel vats.
The Aligoté reveals all of its freshness in this lively wine with notes of white flowers and aniseed on the nose. The very supple palate is full of citrus fruits flavours. This is a wine to be enjoyed when it’s two years old as an apéritif with a meat board or paired with fish baked in parcels.
