The wine
This vintage Blanc de Blancs evokes aromas of pastry, ripe fruit and hazelnut. An attractive minerality emerges on the palate, with brioche aromas. The long finish leads to a lemony note.
About the Producer Cédric Bouchard
Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
