The wine
A Cuvée produced in low quantities and the icon of the domain, le Dolium stands out for its great finesse and elegant length. It deserves to be kept in the cellar for a few years and to be paired with carefully prepared tasty dishes. To produce it, the domain is keen to grow its berries carefully before vinifying them with native yeasts. Élevage is also done carefully and lasts between 18 and 22 months in barriques.

Marie and Pierre Benetière are at the helm on this tiny Rhône domain. But quality in no way correlates to quantity here. Inspired by a sensitive philosophy of viticulture (eschewing pesticides and herbicides), they produce a small quantity of white and red wine which exhibit a rare purity and elegance.
