L'Etoile Vin de Paille Château l'Etoile 2003
The wine
This is a delicious nectar straight out of the Jura. The cuvée is made from Savagnin and Chardonnay. David Geneletti selects the best bunches during the harvest then dries them in the open air for several weeks. During this time the aromas, sugar and colour undergo a strong concentration. The grapes are then pressed before a maturation in oak casks for 3 years. It has an intense brown colour and a nose that leans towards notes of honey and citrus. Marked by a lovely sweetness, this wine will pair well with blue cheese or foie gras.
