The wine
This is one of the most accomplished, complex and dense cuvées in the domaine. This blend of Pinot Noir (majority) and Chardonnay has indeed benefited from amazing vinification, using the Solera process. This blend of several vintages, aged for one year in oak barrels and six years on its lees is charming. There are touches of pastries, very ripe yellow fruit and sweet spices. The round, silky palate is revitalised with minerality and salivating salinity. This is a wine which is undeniably great for keeping and pairing with gastro dishes.
About the Producer Henri Giraud
The young Henri Giraud champagne house is unusual in that it vinifies its wines in Argonne oak barrels, a Champagne forest. The vineyard, located in Aÿ, has well-located plots, in grand cru for the Pinots Noirs. The wines are vinous, slightly woody, quite original and very interesting.
