Information
This white wine from Corbières is a blend of Macabeu (which makes around 50%), Rolle, Grenache Blanc and Grenache Gris grown on the land around the village of Fontjoncouse. The soils are remarkably diverse: limestone-clay with quartz bipyramids, travertine, dolomite and spilite in particular. Two plots are used to create this wine: 1.5 hectares of old vines on a slight hill (with south-east exposure) and 1.5 of vines planted in terraces in 2012 (with north-east exposure).
In the cellar, whole bunches are pressed. Cold settling lasts for 2 days before the juice is placed in casks where fermentation starts naturally (between 18°C and 24°C). The lees are regularly stirred and malolactic fermentation partial takes place. Ageing occurs in Burgundian casks (228 litres) where the proportion of new wood amounts to 10%.
Tasting this Corbières reveals a fresh and ample wine in which the minerality and tautness are balanced as is the richness from the lees and ageing.
