While sparkling wine is now particularly widespread, it was only in the 18th century that it first appeared in the heart of the Jura region. Over the years, a number of estates from different wine producing regions began to produce sparkling wines. In the winery, the vinification method for crémant is known as the traditional method. This entails carrying out a double fermentation. The first allows the production of the white wine, while the second imparts the sparkling qualities of the wine thanks to the appearance of carbon dioxide. Lastly, the cuvée must be aged for a minimum of nine months before it can be enjoyed.
The pale yellow colour with hints of gold is enhanced by a fine, light effervescence. The refined bouquet reveals bewitching fragrances of white flowers such as aubaine. The supple, well-balanced palate reveals a stunning freshness leading to a long, fragrant finish.
