Laura Aillaud invites us to the heart of the Lubéron in Provence to discover her pure, authentic wines. Respect for nature is a central pillar to all that she does on her 6-hectare estates where she practices organic agriculture and uses certain aspects of biodynamics. She also uses draught horses to work the soil.
Libre comme l’air is a meticulous blend of white Grenache, Vermentino and Roussanne, resulting in a cuvée that is as delicious as it is mineral. Organic viticulture is an obvious choice for the winemaker. The plots are lightly tilled and planted with grass cover to preserve the freshness and authenticity of the terroir. This natural, strict approach also extends to the winery. Fermentation is achieved naturally using native yeasts, and little or no sulphur is added to the wines.
The bright colour reveals a rich bouquet combining notes of mirabelle plum tart with candied fruit, quince and elderflower. The acidity of the Vermentino and the fruity aromas of the white Grenache contribute to the perfectly balanced mouthfeel. Floral notes mingle with a fine minerality, leading to a complex, flavoursome finish.
