Information
This 100% Pinot Noir cuvée is the result of a precise blend of different climats of the village of Gevrey-Chambertin. The vines, which grow on well drained, moderately deep, brown clay soils, enjoy the benefits of sustainable viticulture. The fruit is entirely hand-picked and carefully sorted on a vibrating table in the vineyard. The destalked grapes are then vinified in a traditional, low-intervention fashion. The lengthy 17-day maceration allows the fruit to ferment naturally with native yeasts, gently extracting all its tannins. After being gravity-fed into oak casks, including 30% of new wood, in the cool winery, the wines are aged for approximately ten months. The cuvée is then bottled without filtration.
The ruddy-red colour reveals a characterful nose where scents of undergrowth and violet blend with notes of black cherry. The powerful palate reveals indulgent aromas of fruits within a velvety texture, leading to a long and flavourful finish.
