A former broker, Bruno Paillard founded this maison in 1981, hoping to offer only top of the range champagnes. He is also the main shareholder of the Boizel Chanoine Champagne Group (BCC, which above all owns Lanson). The very complete Bruno Paillard range ranges from non-vintage Brut to the prestigious cuvée Nec Plus Ultra, surely one of the longest aging champagnes before commercialisation, and vintages that display on their label an unedited work created by a different artist. A special feature: the disgorgement date is specified on each bottle.
This emblematic cuvée is produced from the first, purest press of Chardonnay from two Grand Cru terroirs, Oger and Mesnil-sur-Oger, located at the heart of the legendary Côte des Blancs. The harvested fruit undergoes a special vinification process. This is because, during the tirage that precedes the fermentation stage in the bottle that creates the Champagne’s effervescence, the House opts for the addition of a smaller quantity of sugar and yeasts than for a classic Champagne. The cuvée is then aged for ten months in the cellar before being ready to drink.
The pale colour with its subtle silver tints is sublimated by an incredibly fine effervescence. The nose exudes lively, floral aromas, complemented by light notes of citrus fruit, almond and toast. The lively, expressive palate reveals a variety of aromas, ranging from citrus flavours to notes of white fruit, marked by a subtle minerality. The long, fresh finish affirms the finesse and elegance of this exceptional Champagne.
