Gilles Ballorin produces sublime wines from a mere six hectares in the prestigious Côte de Nuits region. With a few vines cultivated according to biodynamic methods, he balances the typicality of his fruit with a pronounced freshness. Horses plough the soil and yields are controlled. This allows for a more precise expression of the Aligoté grapes and the terroir where they flourish. The vinification process is low interventionist, and the juices are matured in old casks to preserve the dominant fruit flavours in the wine.
This manifests in notes of honey and flowers on the nose, set off by a pale colour which shimmers golden in the light. This wine’s purity and freshness complement a particularly pleasant, flavoursome palate brimming with aromas of white fruit. Suitable for ageing for around five years, you should wait for the aromas to further develop to reveal a denser, deeper profile.
