Information
The Chelo distillery was founded by Michel Sajous in Saint-Michel-de-l’Attalaye in the north of Port-au-Prince. Distillation is carried out in a small bagasse-fired pot still equipped with a six-plate column. Chelo is one of the producers selected by Luca Gargano and Daniele Biondi during a trip to Haiti in 2012 that helped introduce Clairins to a wider public.
A Clairin 4 year old distilled in 2017 and bottled in 2021 after ageing in Lustau Oloroso casks. It was produced by Michel Sajous from pure Cristaline cane juice. Clairin is a Haitian cane spirit similar to rhum agricole. It is generally made by small producers with local sugarcane. Once only produced for local consumption, it now has a far wider reach thanks to the work of Luca Gargano.
