Located in the municipality of Sury-en-Vaux and Maimbray (to the north of Sancerre), Domaine du Pré Semelé was created in the 1940s, with only 3 hectares to begin with. Three generations later, the vineyard spans 20 hectares and the brothers Julien and Clément Raimbault manage the property together. The vineyard is managed sustainably and takes inspiration from organic viticulture. Grass is allowed to grow between rows so as to promote competition and force the roots to dig deep into the soils for their nutrients. In the winery, vinifications are low intervention and natural. The domain's wines are defined by their intensity, finesse and purity. In 2017, the Revue du vin de France named the cuvée ‘Les Chasseigne' the second-best Sauvignon in the world.
Each vintage year, brothers Julien and Clément Raimbault select a parcel of Pinot Noir grapes from their 20 hectares of vineyards that will be used to make rosé wine. They are grown on clay-limestone soil and are sustainably cultivated, without the use of insecticides, weed killers or anti-rot. After harvesting, the grapes are pressed straight away, without maceration, to preserve the aroma of small red fruits and its perfect freshness. The juice then ferments for 10 to 15 days on fine lees before being aged in vats for several months.
This results in an aromatic rosé with a raspberry colour and aromas of citrus fruits and strawberries, with a hint of fresh herbs, which is energetic and delicate on the palate. A modern and flavourful Sancerre Rosé, to be enjoyed in its youth with a warm goats cheese salad or seafood risotto.
