Today it's Fabien Moreau, an oenologue by trade, who's at the helm of Domaine Christian Moreau -a domain possessing plots ideally situated in grands crus. They are extremely well-kept, and the berries are picked by hand in order to better control the quality of the future juice produced. It is vinified with the view of producing fine, just and precise wines. Thus, Fabien Moreau uses wooden containers frugally, allowing the wines to develop a certain suppleness, even a velvety texture in the mouth.
Planted in 1933 by Guy Moreau, Fabien Moreau’s grandfather, the Chardonnay vines found on this one hectare or so plot are the oldest belong to the domain. These old vines are rooted in a soil of clay-limestone marl with a high concentration of marine fossils, characteristics specific to Chablis. The organically cultivated grapes are hand-picked and carefully sorted, before reaching the pneumatic press. Once the juice has been cold settled, 60% is fermented with natural yeasts in stainless steel vats whilst the remainder is fermented in two to four wine barrels. Ageing continues on fine lees for nine months, followed by blending in vats for a further six months’ maturation.
This elegant and fragrant cuvée offers a bouquet of citrus fruits and white flowers as well as a generous and intense palate full of fresh minerality right until the finish. A wine of stature, perfect for serving with fish and seafood.
