Caroline Ledédenté is an ambitious and passionate winemaker. A former architectural engineer, she decided to focus on her lifelong passion for vines and wine. She started by discovering Jura before working her first vines in the Bugey region. Well aware of the current environmental concerns and with a view to protecting biodiversity, she handles her vines naturally, with the utmost respect for the soil. Each parcel receives specific care depending on its needs, according to organic growing practices. The ambition is to preserve the essential balance between man and nature, so that each plot can freely express its own personality. In the winery, too, the winemaking process is carried out with little intervention, and no sulphur is used. The grape varieties typical of the region and the nuances of the terroir are sublimated thanks to the unique expertise and respect for the environment of a passionate and committed winemaker.
Caroline Ledédenté, a former architectural engineer, has turned her passion for wine and vines into a career. Established in Bugey, at the southern end of the Jura mountains, she follows healthy, balanced viticulture methods and works as naturally as possible. The hand-picked grapes are carefully transported to the winery. First, the skins first macerate for three weeks with the whole bunches. Alcoholic fermentation is triggered by native yeasts naturally present in the berries. The cuvée then ages in stainless steel vats for around nine months before being bottled without clarification, filtration or any sulphites.
The pale colour graced with bright tints reveals a bewitching fragrant bouquet of pear, yellow peach and white flowers. The fresh, round palate reveals delicious buttery aromas leading to a lively, fruity finish.
