This white Burgundy combines Chardonnay from the Côte de Beaune and the Hautes Côtes de Nuits, selected for their elegance and their minerality with grapes sold from southern Burgundy, from the heights of Mâconnais, adding their roundness and fruitiness to the wine. The Côte d’Or Chardonnay makes up 65% of the blend. It undergoes the typical Burgundy wine making process and matures for one to four years in oak barrels with regular lee stirring. The Mâconnais grapes are vinified and matured in stainless steel vats to conserve the freshness and the fruity notes.
Blending creates a pale wine with an expressive nose that contains notes of citrus fruits, white blossom and green apples enlivened by a hint of butter. Having been matured in barrels, a touch of vanilla can also be detected. On the palate, the wine is rich, fatty, but restrained by an acidity that brings freshness with it. Hazelnut notes can be found in the finish. This is a wine that will enhance fine meals such as sole meunière.
