Aligoté is Burgundy’s other white variety. Unfortunately, its reputation has suffered a lot from being used in Kir, the cocktail made with blackcurrant liqueur. However, when grown to produce low yields and vinified with care, it produces fresh wines with floral and pleasant vegetal notes. Fanny Sabre offers her version with this natural cuvée. At the vines, she works meticulously and respects the soil, ploughing the land and growing the vines organically. After being harvested by hand, the grapes are gently pressed, then placed in oak barrels to be fermented by natural yeasts. The wine develops in wooden casks until the summer following the harvest.
This pale wine that shimmers green reveals an understated nose that develops as it come into contact with more air. White blossom, pear, and herbaceous aromas are underlined by a hint of smoke. The palate is fresh, very lively, and perfectly balanced with a beautiful bitterness appearing in the finish.
