After having spent years selling wines, Grégoire Hoppenot wished to go back to basics and create his own wines. This winemaker is motivated by his love of the earth and does what he can to look after it, which includes holding organic certificates. His past as a wine merchant means that he has a font of knowledge about the region’s terroirs, varieties and commercial techniques. In the cellar, he lets the terroir reveal all its potential, favouring gentle vinification started by natural yeasts and without adding sulphites. The wines are matured in different containers: concrete vats, large wooden barrels, and barrels that have already housed several wines.
Grégoire Hoppenot likes white Beaujolais but does not own any Chardonnay vines, being busy with his nine hectares of Gamays in Fleurie. He has, however, found a solution. He has created this cuvée in collaboration with a winegrower whose Chardonnay can be found in the north of the appellation on a limestone-clay soil. Harvested by hand, the grapes are pressed and then, natural yeasts ferment the juice. The resulting wine will charm anyone from the first drop with its golden colour, aromatic citrus fruit notes and its slight butteriness. The palate is fresh, supple and well balanced. A very pretty wine to enjoy with oven-cooked sea bream or grilled poultry.
