This seven-hectare climat takes its name from the Roman era during which the prunus variety of cherry trees, popular up until the Middle Ages, were planted. Pinot Noir stretches across the gentle slope there, sinking their roots into the deep soil with a slight layer of clay and many small pebbles. Domaine Chicotot own a small, 900 square metre plot, covered in old stocks that are more than seventy-five years old and grown using organic methods. After being manually harvested, the grapes are macerated for five to six days, then fermented spontaneously thanks to natural yeasts. Punching down and racking take place as and when needed to avoid excessive extraction. After about 15 days fermenting, the must is pressed and placed into vats for several days. The wine reveals beautiful notes of black fruits, mixing plums, blackberries, blackcurrants, which are joined by floral and slightly smoky aromas. Powerful, sometimes a little austere when young, it gains density and a good structure as the years go by thanks to the fine tannins. The wine also acquires a wonderful elegance. A beautifully concentrated wine with an ever-lasting finish that develops while in the cellar. But be warned, this wine must be enjoyed before it turns 15.
