Information
The estate can trace its history back to the mediaeval era, as it was fortified by the Florentines in 1204. It still bears the traces of these fortifications, notably in the ageing cellar. San Giusto a Retennano passed into the hands of the Martini di Cigala family by marriage in 1914. Today, it is managed by their descendants and their partners – Anna, Lucia, Elisabetta, Francesco, Alessandro and Luca. They have all played their part in achieving organic certification for the domaine.
Passito is a wine made from dried grapes. This process concentrates the sugars in them as well as the acid and aromas, creating an intense, very aromatic sweet wine. This Tuscan Passito is a blend made from 90% Malvasia grapes and 10% Trebbiano, two white Italian varieties. Harvested by hand throughout September when the organic grapes have reached the perfect ripeness, the yield is placed on a drying rack in a well-ventilated room and dried for 140 days. The grapes are then pressed before the must is transferred to small sweet chestnut barrels between 40 and 180 litres in size placed in a wine cellar subject to temperature changes. During the six years in them, the wine develops a great aromatic complexity and loses about 40% of its liquid, producing an extremely concentrated nectar. Before bottling, the wine is filtered drop by drop using a cloth and then left to mature in the bottle for a further eighteen months.
Aromas of honey, aromatic herbs, white fruits, and nuts escape from the wine that is the colour of pure gold. The palate is smooth, very sweet, but perfectly balanced by its chiselled acidity. A true delicacy
