Information
The Douglas Casimir Distillery was founded by Duncan Casimir in 1979 in Barradères, south-west Haiti, and is today directed by his son Faubert. The distillery uses Hawaii White and Hawaii Red cane. Unusually, lemon grass, cinnamon and sometimes ginger are added to the must before distillation in a pot still. Faubert Casimir is one of the producers selected by Luca Gargano and Daniele Biondi during a trip to Haiti in 2012 that helped introduce Clairins to a wider public.
A single cask Clairin Casimir (#CARSA8) distilled in 2016 and bottled in 2018, aged for 19 months in casks from the famous Caroni distillery in Trinidad and Tobago, which is now closed. This cask was selected by Lidwine Maro in 2017 during a tasting of 54 casks of Clairin.
