Château de Ciffre is a Languedoc domain that covers seventy hectares of land. Thirty-three of these are used for growing vines across three reputed southern appllations: AOP Languedoc, Faugères, and Saint-Chinian. The vines have been grown organically since 2015, with official certification granted four years later. Running this property, which was acquired in 2007, are Nicolas and Miren de Lorgeril, a forward-thinking and optimistic couple who manage several of the region’s properties with great enthusiasm.
This domain is found 25km from Pézenas and enjoys varied terroirs, some of which are clay and limestone-based, while others are rich in schist. The vines themselves enjoy steep terraces that are ideally exposed on cool, pebbly slopes.

A classic and successful blend of Syrah, Grenache, and Mourvèdre from grapes grown at 650 metres above sea level, where they enjoy a schist-rich terroir in the foothills of the Pic de la Coquillade. Here, low temperatures in the night allow for a slow ripening of the grapes, bringing them a more complex palette of aromas. These aromas are preserved by a gentle handling of the fruit, with manual harvests carried out parcel by parcel and a respectful vinification in the winery. The grapes are kept in vats for up to thirty days, then extracted gently.
In the glass, this wine is an aromatic explosion: hints of stewed black fruit and cacao are sprinkled with a touch of pepper. Twelve months of ageing bring some lovely toasted notes. Its round and full-bodied mouthfeel is structured by soft tannins, promising some long years in the cellar. A wine that will pair nicely with a characterful dish such as duck magret.
