They may not be the most famous, but Voyer cognacs are certainly some of the highest quality cognacs on the market and are frequently found on the menus of Michelin star restaurants. The family-owned house founded in 1870 distils wines made from grapes grown at their own vineyard, which spans some 28 hectares in the Cognac premier cru of Grande Champagne, between the towns of Verrières and Ambleville. These wines are primarily made with Ugni Blanc grapes grown using certified sustainable and High Environmental Value methods, resulting in acidic wines ideal for distillation that develop a wide palette of aromas once in contact with the oak barrels. Cognacs François Voyer also work with a large number of other winegrowers in Grande Champagne.
The house was taken over in 2017 by its cellar master and oenologist of 20 years, Pierre Vaudon, who has continued to perpetuate the style developed by five generations, with cognacs that boast incredible ageing capacity. The Paradis, which is home to hundred-year-old eaux-de-vies, is yet to reveal all its secrets.
Grown entirely in Grande Champagne, the most famous appellation in Cognac, François Voyer VSOP is a rich, complex cognac with lots of length. François Voyer VSOP is a blend of cognacs aged 7 to 14, distilled on their lees and aged first for three years in medium-toasted new oak Limousin barrels, then in casks in a humid cellar. The cognac is reduced gradually with distilled water (maximum 5% reduction per operation every six to twelve months) to maintain as much finesse and complexity as possible.
