This cuvée is the only white wine made by Valentin Valles. With 7 years’ experience alongside Eric Pfifferling (Domaine de l’Anglore), this producer cultivates 6 hectares of vines organically and biodynamically. Saint Quentin La Poterie is few kilometres west of Tavel, and the terroir is rich in sand and silica.
The Goéland cuvée is a single-varietal Sauvignon. The grapes are vinified with little intervention; there are no additives used in the winery, and sometimes just a small amount of sulphur is added during bottling. The juice ferments using wild yeasts before a maturation in vats and old casks.
To taste, this wine is fresh with a nice tension. Its fruit is dominant with a rich texture. Its style is juicy and lively with exceptional flavour. You can keep this cuvée for 5 to 10 years. Pair it with a dish like fish or a courgette gratin.
