Domaine Berthaud’s Clos Vougeot grand cru is a single-varietal Pinot noir cuvée grown sustainably at the heart of the appellation in chalk- and clay-rich soil. To best respect the identity of the terroir, the producers leave nothing to chance. The vines are 30 years old on average and harvested by hand with a strict sorting process. The grapes undergo cold maceration for a few days, extracting all the colour and flavour from the noble varietal. Alcoholic fermentation is instigated by indigenous yeasts and pumping over is practiced once or twice a day, as well as a method that involves immersion of the marc cap. The malolactic fermentation and maturation take place in oak casks (30% new wood) for 16 months. The wine is then bottled without fining or filtering. In the glass this wine has a deep ruby colour and a pleasant nose that balances fruity and earthy notes. On the palate it has an intense, energetic feel. With excellent ageing potential, this cuvée should be paired with a characterful dish.
