François Parent took over from his father, who bottled his first vintage in 1955. The domain went on to produce wines sold in the best Michelin-starred restaurants. François Parent also vinifies his wife's wines at A-F Gros. This cuvée was produced until 2006; when the parcel was sold.
This Corton blanc is a single-varietal Chardonnay cuvée whose vines are around 20 years old. They grow in clay- and chalk-rich soils and are cultivated organically. The domain received Ecocert certification in 2013. During the vinification, the grapes that have been picked by hand and carefully sorted undergo pressing in whole harvests. Fermentation then takes place in new oak casks in order to confer more body and flavour to the wine. Light stirring brings the lees to the surface, bringing a certain buttery texture to the wine. It is then matured for 14 to 16 months on lees before being bottled at the domain. In the glass it has a light colour with hints of green. Its aromatic bouquet is complex, revealing typical Chardonnay notes of pear and yellow fruits as well as maturation notes like nut, specifically toasted almond. Unsurprisingly, the texture is a rich one led by a superb minerality. Altogether it is refined with good ageing potential.
