This is the signature cuvée from an iconic domain of the Cyclades. Whilst this domain wasn’t initially know for making fine wine, this changed when Alexandre Avatangelos, current owner, philosopher and theologian, came onto the scene. To make this cuvée, Assyrtiko vines were grown organically. The grapes enjoy ideal exposure at 400 metres of altitude and the influence of sandy soil over granite. The roots have to push deep into the earth to reveal its quintessence in the resulting wine.
In the winery, alcoholic fermentation takes place in stainless steel vats, containers that preserve the freshness of the fruit and carry this through to the wine.
In the glass, this cuvée has a lively, yellow colour with notes of apricot and herbs. The palate is balanced by a lovely acidity that confers great freshness. We recommend savouring this cuvée with a salad of courgette, feta and pine nuts or a Greek-style mezze aperitif.
