This Chambolle-Musigny from Domaine Henri Felettig is a blend from twenty parcels found in the eponymous appellation; they cover 3 hectares of vines. The domain grows its Pinot Noir responsibly to “transform what nature gives into wine”. They limit yields to around 40hl per hectare. The grapes are harvested by hand and thoroughly sorted before vinification. They undergo a cold maceration for a week, which extracts flavour and colour. Wild yeasts set off alcoholic fermentation, a process that lasts around ten days. Temperatures are closely controlled. The wine is stirred and pumped over every day to maximise texture and flavour. It then matures in oak casks for 14-18 months.
This is a ruby-coloured wine that gives off delicate notes of red fruit and flowers. Light on the palate, it has an acidic underscore that lingers. We recommend uncorking it at some point during its first ten years. You can pair it with a tender dish like poultry, butternut mash or stuffed mushroom.
