This Chassagne-Montrachet premier cru comes from a terroir located south of the Chassagne village. Pinot Noir was the varietal of choice here for a long time, before the Chardonnay grape amply demonstrated its capacity to flourish in this area. The Chardonnay used in this cuvée was grown according to biodynamic-inspired methods, and the soil has been the object of much thorough care.
The idea of crafting a wine that reflects its terroir is always kept in mind here. It is matured in 350-litre casks with a low proportion of new wood. The resulting wine has a golden hue and a complex aromatic bouquet. It gives off floral notes of rose and honeysuckle, as well as aromas of white fruit, stone fruits, minerals, and fresh almond. Its palate balances density with a striking mineral side; it is persistent with a slightly salty finish.
Foodies might like to pair this with a lobster bisque, salted salmon, or veal with morels.
