The Carillon family has been established in Puligny-Montrachet since the 16th century. In 2010, the family vineyard was shared between the two brothers, François and Jacques. François Carillon cultivates 6.5 hectares and also runs a trading business. The domaine produces great white wines.
This Puligny-Montrachet cuvée is made using 50-year-old Chardonnay vines that enjoy their steep slopes of soil rich in clay, chalk, and pebbles. Thanks to thorough work in the vineyards, the domain has got the roots to push deep for their nutrients, and this work comes through in the final result. This wine has a pale, golden colour with a refined aromatic bouquet. We get notes of citrus, white flowers, white fruit, and a hint of minerality. We recommend leaving this cuvée to age in the cellar for a while, since it is made for that. When you finally uncork it, it will pair well with delicate dishes such as noble fish, green asparagus gratin, or a truffle risotto.
