Domaine Aurélien and Charlotte Houillon was founded at Faucon, in the Vaucluse, in 2017. Just like his brother, Aurélien trained at Domaine Pierre Overnoy, before following up his experience in Switzerland and then launching into the task of starting his own domain with his wife. The vineyard spans 9 hectares at the foot of Mont Ventoux. The soils are worked mechanically and fertiliser from the property's animals is used. As we can imagine from the Aurélien's history, everything to do with vinification is natural, all the way down to the label! Charlotte is a specialist in ancient manuscripts and has learnt how to make paper from vegetal matter. The wines from this young property are promising, offering at once power and amazing fruit. A domain to discover and follow closely!
The creator of this cuvée, Aurélien Houillon, made his first steps into the wine world with the father of natural wine, Pierre Overnoy. The 70-year-old Grenache vines used for this wine are cultivated organically and biodynamically. The plants enjoy a lightly sandy soil of clay and chalk with good exposure to the south-west.
The bunches are harvested by hand and thoroughly sorted. The grapes are destemmed before a 14-week maceration in steel vats and a gentle pressing. The wine matures for 10 months in used casks and is bottled without additives or sulphites.
This wine has a deep red colour with ripe notes of black fruit, gentle spices, and flowers like violet. It is velvety on the palate, persistent in its fruit character with well-integrated ageing notes. This is a wine to be uncorked within ten years.
