The story begins in 1960, when Patrice Michon decides to plant some vines in Brem-sur-Mer in the Vendée. 25 years later, he is joined by his two sons, Eric and Thierry Michon. They decide to modernise their winery and start planting other vines in Ile d'Olonne. Since 1995, Domaine Saint-Nicolas has been certified in organics and biodynamics. Th work carried out in the vineyard is very clean, the harvests are manual, and only indigenous yeasts are used. The low yields explain the rarity of Domaine Saint-Nicolas' wines. The domain successfully cultivates a great range of grape varieties, including Chardonnay, Chenin, Grolleau Gris, Pinot Noir, Cabernet Franc, Négrette and Gamay. Today, the wines from this domain can be found at the tables of some top-end restaurants.
A red wine made mainly from Pinot Noir and a touch of Négrette, Gamay and Cabernet Franc. It has a ruby colour with flecks of purple, and the nose gives of notes of cherry and spices. The palate is tonic and flavourful with a lovely balance of fruit and spices. To be enjoyed young, within 5 years. The vines grow in a clay-schist terroir gently exposed to the south-east. The soil is treated biodynamically with the help of manure compost and nettle tisane. After a manual harvest and natural vinification, the grapes are fully destemmed and macerated for 10 days. The wine is then matured for 10 months in barrels to refine its tannins and to confer oaky notes.
