Maison Savart describes itself as a producer of "auteur" wines. Lying 10 km west of Reims, the domain is in the village of Ecueil which has specialised in growing Pinot Noir for many years. Frédéric Savart has made the 4 hectare property his own, continuing his father's work on this "laboratory of terroirs". He produces exciting, fresh and quite varietal champagnes always with a predominance of Pinot Noir. Its limited production (40,000 bottles approximately) make it well worth the detour!
This champagne comes from a premier cru terroir on the Montagne de Reims, more precisely in Ecueil. This is where Frédéric Savart cultivates the Pinot noir used in this cuvée, drawing its noble profile from an exceptional terroir. He likes to create wines with a vinous side to them, hence why the grapes are vinified and matured in wooden containers. After a 10-month maturation in oak casks with no stirring, and an extra-brut dosage of 0-6g per litre, this wine offers superb tension that will benefit from a few years of ageing.
Its freshness and vivacity make this cuvée perfect at the start of a meal to awaken the taste buds, pairing with delicate, salty dishes. We recommend ceviche, salmon tartare, or fresh goats’ cheese with chives.
