Information
This cuvée from the Cordier domain has great ageing potential. Its pale, yellow colour develops a golden hue as it ages, and its bouquet carries notes of butter, white fruit, nuts, white flowers, and minerals. In time, aromas of dried fruit and vanilla make their way into the mix. The palate is both rich and mineral, underscored by a superb acidity that promises freshness and delicate food pairings.
The current owner, Christophe Cordier, has chosen to labour the soil in a way that encourages microbial life and gets the roots to push deep. The vines are pruned to ensure the maturity of the fruit, and nothing is left to chance during vinification. The grapes are fermented by wild yeasts under controlled temperatures, and the wine is matured at length in wood.
This wine will pair well with creamy dishes, maybe a parmesan risotto or stuffed mushrooms.
