This cuvée was made from old vines grown at the heart of Viré-Clessé. The owner of this family property, Christophe Cordier, is dedicated to producing fine wines from organic-inspired growing. He ploughs the soil to encourage microbial life and get the roots to push deeper. He prunes the vines thoroughly to optimise the maturity of the berries. The Chardonnay is then harvested by hand and taken to the winery in small cases where it is vinified in whole bunches. Fermentation is instigated by wild yeasts and the wine is matured on lees and in wood for 18 months. The resulting cuvée is dense and complex, exuding notes of vanilla, butter, nut, white flowers, and white fruit. It is silky and generous on the palate. It should be a kept in the cellar for a while before serving with a hearty dish.
