Domaine Billaud-Simon was founded in 1815 and covers 17 hectares of the most beautiful terroirs of Chablis, with four grand crus (Les Clos, Les Preuses, Vaudésir and Les Blanchots) and four premier crus (Montée de Tonnerre, Mont-de-Milieu, Fourchaume and Vaillons). In 2014, the domaine was bought by the Faiveley family, who confirmed their determination to maintain the Bernard Billaud style with precise wines, which stand out for their fine minerality.
This grand cru is distinguished by its soil of marl, clay and chalk and by its perfect exposure to the south, guaranteeing the perfect maturity of its Chardonnay. To create this wine, the domain selected sixty-year-old vines harvested by hand. The grapes were vinified in stainless steel vats and the wine was matured in oak barrels in order to improve complexity and ageing potential. Its golden hue brings with it a complex aromatic bouquet marked by notes of white fruit, citrus, honey, dried fruit and verbena. Its ample and chewy palate is at once lifted by a certain freshness and deepened by indulgent flavours like toasted bread and vanilla.
