The historic Château de Saint Cosme in Gigondas has the site of a Gallo-Roman winery, complete with vats cut into the rock, in its grounds. The property has been in the same family since the end of the 15th century and 15 generations of wine makers have followed on from each other. Today, the vineyard comprises 22 hectares of old vines (more than 60 years old) and yields low volumes of grapes. The vines enjoy a cool climate that gives the wines their balance, finesse and freshness. The domain was following the principles of organic farming as far back as the 1970s and today it avoids herbicides, chemical fertilisers, pesticides and synthetic products completely. The Château supplements its own output with a négoce business, working with winegrowers who are passionate about their trade. Wines from this domain are fairly representative of their appellation and have plenty of depth.
This Côte-Rôtie is made from Serine, an old variety of Syrah. It was grown on schist terroirs and vinified in whole harvests. The wine was then matured for a year in 40% new containers and 60% used ones. It carries complex notes of dark fruits, black olives, smoked meat, pepper and violet. Rich and energetic, this Côte-Rôtie has managed to convince professional critics with incredible ease.
