Coume del Mas was created in 2001, when Philippe Gard carried out his first vinifications. Situated on a very sloping terroir, the highest parcels reaching 380m, while some of the vines grow right next to the Mediterranean. With sometimes vertiginous drops, the grapes are harvested by hand. One grape variety is at the heart of Philippe Gard and his wife Nathalie's work, Grenache. They use Grenache Noir, Gris and Blanc in both blends and alone to produce red, white and rosé wines. They also grow five other varietals: Mourvèdre, Carignan, Vermentino, Roussanne and Syrah. Philippe Gard works for the most part with long élevage in barrels.

The domain's white Collioure is an opulent, rich wine with intense aromas. The bouquet reveals aromas of citrus (grapefruit) and white-fleshed fruit against a vegetal (fennel) backdrop. The finish is long and mineral, with a pleasant saline character. This wine forms a marvellous pairing with grilled fish or Asian-style raw fish.
